Pre-4th of July

4th of July Lemon Cake

Right about now, I'm usually preparing a dessert or an appetizer for Carol's and Thane's 4th of July party.  The party will go on without us this year.  Our friends, Brooke and Deyo are getting married tomorrow and we're attending the wedding.  It's a very romantic story.  Brooke and Deyo met at a mutual friend's backyard 4th of July party a few years ago.  Last 4th of July Deyo proposed.  This 4th of July the happy couple are getting married at the very same backyard barbecue!  I do believe that the catering has been stepped up a bit for a bigger crowd tomorrow.  I love the tradition!
HOWEVER, if you happen to need a 4th of July dessert, try my Flag Lemon Cake.  It's yummy and festive!

4th of July Lemon Cake
Ingredients:
1 Duncan Hines Golden Yellow Cake Mix
1 sml. package Jello instant lemon pudding mix
4 eggs
½ pint sour cream
½ cup oil
½ cup water
1 Tbs. fresh lemon juice
Cool Whip©
Strawberries, sliced
Blueberries


Instructions:
Mix together with electric mixer at medium speed, cake mix, pudding mix, eggs, sour cream, oil, water and 1 Tbs. lemon juice.  Pour batter into greased and floured 13 x 9" pan.

Bake at 350 degrees for 45-55 minutes or until golden brown....test cake by inserting a silver knife in the center of the cake...if it comes out clean, then the cake is done.   Cool cake completely.

Top the cooled cake with a layer of Cool Whip©.  Add sliced strawberries and blueberries to resemble stripes and stars, following photo above.
